I looked up recipes I could use when we RV and I found these recipe. I tried them and they are yummy.
2 packages, 8 ounces each, cream cheese
8-ounce carton of sour cream
1 tablespoon of grated onions
4-ounce can of chopped green chilies, well drained
4-ounce jar of chopped pimentos, well drained-I’m not a fan of pimentos so I didn’t add them
6 burrito-size flour tortillas
Let cream cheese warm to “room” temperature or nuke it for a few seconds for easy mixing. Add sour cream, grated onions, pimento’s and chilies. Mix well. Divide mixture among the tortillas and spread evenly. Roll up, wrap and chill. Slice just before serving.
Southwest Chicken Salad
2 bags Spring Salad Mix
1 can sweet corn, drained
1 can black beans
Fresh salsa, to taste
4-5 green onions
Shredded cheddar cheese
1/2 lb chicken saute in olive oil, garlic, salt+pepper or your own special blend
Wash salad mix, pour into a large salad bowl. Add onions, corn, cheese and black beans, toss. Top with salsa and dressing, toss and serve with tortilla chips and avocado or your special dip recipe.
